April, I am the Fool

It seems that whenever I make the bold statement, "I'm all caught up on the blog and I'm keeping it that way," a month and a half goes by and I'm behind once again!

March 31st was a fun, but emotional day for all of us as we said goodbye to Kimmy and Bart (AKA Uncle Bark). They wanted to cook a final meal for all of us to enjoy together, and boy did we enjoy it! Bark made up this Pistachio Salmon recipe that was TO DIE FOR. Just as they screeched in from a long day of packing up in Menifee, they began to cook! We all enjoyed our visit together as we reminisced, laughed, told stories, and finally figured out what in the world that weird beaver song was! (It's called The Hamster Dance, by the way...had nothing to do with a beaver...)

Kimmy and Bark made it to Florida after safely driving across the country visiting friends and cool places. Visit Kimmy's blog called "Kimgowski Adventures" to read about their travels, setting up their business, skydiving, and, in all honesty, hilarious scenarios that Kim describes so well. We miss you guys, but we love your blog! Keep it coming!

We also spent our first Easter in Carlsbad, which was strange, but really nice. Mike wanted to go to an episcopal church for service, so we went to St. Andrews in Encinitas. It was such a beautiful service and Ralph drove up and joined us. After the kids took their naps, we headed over to the Heublein house where Colleen and Bill whipped up an amazing feast for us! Lamb chops, anyone? It was such a low key afternoon and definitely what the doctor ordered.
